Overnight Chia Breakfast With Quinoa Flakes: A Protein Rich Vegan Bowl

Overnight Chia Breakfast With Quinoa Flakes.

A Protein Rich Vegan Breakfast You Soak The Night Before, And Eat Hot Or Cold.

Soak Overnight In The Fridge. Serve Hot Or Cold.

Introduction to overnight chia breakfast

This overnight chia breakfast is chia seeds, quinoa flakes and a little lecithin soaked in water in the fridge overnight, with sunflower seeds and berries if you like. It is vegan, you can eat it hot or cold, and it is one of the ways I get plant protein at breakfast.

I make this most mornings. It is a flexible recipe, and this is the basic version. The picture shows one of my regular breakfasts: the mix of chia, quinoa and passion fruit seeds in the middle, with red goji berries on top.

When I eat this breakfast I don’t feel hungry during the morning, so I find it helps me avoid snacking, and avoid lots of other carbs or sugar rich food.

It is not my only protein. I also eat tempeh, tofu and lentils, and I drink a pea based protein.
