My favourite recipe for black rice pudding.
It’s called Indonesian black rice pudding recipe, or Balinese black rice pudding recipe. If you’re looking for a black sticky rice pudding recipe option, then check it out, including in different variations. In my opinion, it’s the best Asian, vegan, recipe with coconut milk, and my favourite recipe for black rice pudding.
It was given to me in the free cooking class included in Flametree’s Bali Yoga Retreat.
You’ll sometimes find the black rice at major supermarkets.
Alternatively, in Darwin NT, you’ll nearly always find it at the Asian Food Emporium on Bagot road (or its equivalents elsewhere).
Black rice is so nutritious and healthy that the Asian royalty originally reserved it just for themselves. So, it was called “forbidden rice”.
You can include a range of ingredients, as you’ll see below, and use the dessert also as a breakfast dish.

How black is the final dish?
As you can see in the ingredients below, Black rice is very black.
When its cooked, depending on how much coconut milk you add, it may have some of the grey or purple colour you can see above.
Balinese black rice pudding recipe ingredients & variations
Ingredients: Indonesian Black Rice Pudding Recipe.
The picture above has the main ingredients, which are these:
- one large cup of black rice
- a tin of coconut milk
- half a teaspoon of salt, or less, to taste
- 3-4 cloves… or half a teaspoon
- one cinnamon stick
- one pandanus leave, or bay leaf
- coconut yoga to add when served
- a banana can be cooked in so as to add sugar, or serve with it
- ideally, some berries, especially purple ones like blueberries.
If you want, you can also use the black rice for breakfast, including with a separate chia seed, sunflower, and husk mix you can see in the picture below.

How to make Indonesian Black Rice Pudding
Here are the main steps to make whatever version of this dessert you want.
- cover rice in saucepan, and soak overnight
- in a medium sized saucepan, combine soaked rice with one and half cups of water, coconut milk, bay leaf or pandan leaf, and salt
- boil rice until softish, while stirring occasionally
- add cloves, cinnamon, and stir
- bring back to simmer
- cook until tender, while adding water for consistency.
The whole process of cooking, as above, could take up to an hour.
Serve with whatever fruits you fancy, ideally the lower sugar ones.
Add coconut milk to your liking.
Some suggest that black rice gets more sticky if you add some white rice. Or, maybe it’s just more economical.
Then, or course, the dish is less black, as in the picture below.
White rice variations
Add to other breakfast cereal mixes if you want
Some want to eat a lesser amount of rice, of any type.
If so, another option is to just use black rice pudding Indonesian style, as a way to add additional flavour to some mix of cereals.
For example, below is a highly nutritious and sustaining breakfast mix, that’s also very portable. (In other words, it’s an easy breakfast when you travel).
Essentially, just use 1-2 dessert spoons of quinoa flakes, sunflower seeds, and chia seeds, as well as one desert spoon of lecithin.
Then, soak the mix overnight.
When you’re ready, serve with some mix of fruit, your choice of milks, and add black rice if you want.
You can also cook the chia mix on a stove, just like you would with traditional rolled oats.
