Coolalinga pumpkin curry green bean mix recipe including coconut milk, chickpeas & more. Yum!

Ingredients: Coolalinga pumpkin curry green bean recipe

Here are all the ingredients.

  • 500 grams of Coolalinga pumpkin (about 3 cups cut to small pieces)
  • 3 shallots
  • Can of chickpeas
  • Can of coconut milk
  • 2 tsp of grated fresh ginger
  • 3 garlic cloves
  • A tsp of grated fresh turmeric
  • 2 spring onions
  • A tsp of cumin
  • 2 tsp of a mild curry powder ( I used a mild Malay)
  • One tsp of coriander powder
  • A cup of vegetable stock… i.e. powder mixed in a cup of water
  • Half tsp of chili powder
  • One tsp of garam masala
  • Large handful of fresh green beans
  • A dessert spoon of chopped fresh coriander
  • Served with baked, marinated tofu which we added as a side dish.

How to make Coolalinga pumpkin curry, coconut milk, green bean dish

Follow these steps.

  • Steam the Coolalinga pumpkin, (or whatever you’ve managed to find), with a bit of water in a steamer. Then put aside.
  • Also steam green beans (cut into pieces about the length of your finger)
  • Sauté the finely sliced shallots with olive oil, ginger, garlic, turmeric
  • Add spices when it smells aromatic
  • Add coconut milk, pumpkin, stock. Simmer for 10 minutes.
  • Add beans, chickpeas, and spring onions. Simmer for another 5 minutes.
  • Serve with sprinkled coriander, and the baked tofu.
