Roasted Vegetable Soup
Home made gluten free flat bread
Gluten free flat bread.
Mix together equal portions of chick pea flour and gluten free self raising flour with water to make a smooth “pancake” type mix.
Heat a cast iron skillet, coat with olive oil and pour in the mixture to make flat bread. Cook each side.
Among other things, the chick pea flour ensures it’s high protein and very filling.
How to make Roasted Vegetable Spicy Soup
Use these steps.
- Prepare these vegetables for roasting…cut into pieces…carrots, sweet potato, red capsicum, pumpkin.
- Large red onion – Cut into sections.
- Line a baking tray with baking paper , add small amount of olive oil.
- Set Oven at 200. Bake until cooked and browned.
- Allow to cool.
Prepare Spices
See all of these spices in the picture below.
- 1.5 tsp coriander
- 3/4 tsp cumin
- 1/2 tsp tumeric
- 1/2 tsp smoked paprika
- 3/4 tsp garam masala
- 3/4 tsp malay curry powder – can use a hotter curry powder if you wish.
Mixing your own spices is a key way to ensure you get a dish that’s delicious, but adjustable to your taste.
Blend
- 3 cloves of garlic
- Plus cooked vegetables into a smooth mix.- add a little coconut milk to make it into a smooth mix.
Cook Soup
- Into a large saucepan, add a small amount of olive oil, and cook 2 sliced shallots then add spices and stir into a paste.
- Add vegetables and a glass of coconut milk – can use more coconut milk if you wish the soup to be creamy. I did add more coconut milk for this recipe.
- Cook for 15 mins. Add salt and pepper to suit. Cook a little longer. Adjust taste to suit.

Marinated Baked Tofu Tossed in Gluten Free Flour. Drizzle with Olive Oil And Tamari. Bake till golden

Darwin Marinated Baked Tofu. One of my favourite ways to eat tofu. Ideally use firm blocks from your local health food shop. Again, I find they have less of the additives that sometimes give you unpleasant surprises!

In my opinion, this is a life-changing recipe, for these reasons.
It’s the most delicious way to eat tofu protein. Some won’t even realise it’s tofu!
This dense, white tofu (with no crappy additives), is a powerful way to get the amount of protein you need to perform, and build wellness.
The protein also keeps you from getting hungry… so it helps manage weight.
The gluten free chickpea flour adds even more protein… and is delicious.
Then, of course, the soup gives you plenty of the very important vegies.
So, all in all, it’s a great way to build a super healthy meal that can change opinions about both vegan and vegetable food.
Most importantly, it heads off the number one mistake many vegans make… that causes them to give up on veganism… not eating enough protein!
