Introduction to roasted vegetable soup
This roasted vegetable soup is carrot, sweet potato, red capsicum, pumpkin and red onion, roasted until browned, then blended with garlic and simmered with coconut milk and warm spices like coriander, cumin, turmeric and garam masala. It’s vegan. I serve it with marinated baked tofu and a gluten free chickpea flatbread, to make a filling meal.
It’s a delicious soup that’s popular with everyone, even those who may sniff at vegan vegetable soups!
I also think it’s a life-changing recipe. Yes, seriously. It’s the most delicious way I know to eat tofu, and some people won’t even realise it’s tofu. The soup gives you plenty of vegies too.

Ingredients for roasted vegetable soup
Here are the ingredients for this Flametree Yoga Studio dish.
The roasted vegetables
- Carrots, cut into pieces
- Sweet potato, cut into pieces
- Red capsicum, cut into pieces
- Pumpkin, cut into pieces
- 1 large red onion, cut into sections
- A small amount of olive oil
The spices
- 1.5 teaspoons of coriander
- 3/4 teaspoon of cumin
- 1/2 teaspoon of turmeric
- 1/2 teaspoon of smoked paprika
- 3/4 teaspoon of garam masala
- 3/4 teaspoon of Malay curry powder, or a hotter curry powder if you wish
The soup
- 3 cloves of garlic
- 2 shallots, sliced
- A glass of coconut milk, plus a little extra for blending, and more if you like it creamy
- A small amount of olive oil
- Salt and pepper, to suit
The chickpea flatbread
- Chickpea flour and gluten free self raising flour, in equal portions
- Water
- Olive oil, for the skillet
The marinated baked tofu
- Firm tofu
- Gluten free flour
- Olive oil
- Tamari
For the tofu, ideally use firm blocks from your local health food shop. I find they have fewer of the additives that sometimes give you unpleasant surprises!

How to make roasted vegetable soup
Use these steps to make this spicy roasted vegetable soup, with its tofu and flatbread.
Step 1: Roast the vegetables
- Cut the carrots, sweet potato, red capsicum and pumpkin into pieces, and the red onion into sections.
- Line a baking tray with baking paper, and add a small amount of olive oil.
- Set the oven at 200 degrees Celsius, and bake the vegetables until they’re cooked and browned.
- Allow them to cool.
Step 2: Blend
- Blend the garlic and the roasted vegetables into a smooth mix. Add a little coconut milk to help it along.
Step 3: Cook the soup
- In a large saucepan, heat a small amount of olive oil and cook the sliced shallots.
- Add the spices and stir them into a paste.
- Add the blended vegetables and a glass of coconut milk. Use more coconut milk if you like your soup creamy. I did for this batch.
- Cook for 15 minutes. Add salt and pepper to suit, and cook a little longer.
- Adjust the taste to suit you.
Step 4: Make the chickpea flatbread
- Mix equal portions of chickpea flour and gluten free self raising flour with water, to make a smooth pancake style mix.
- Heat a cast iron skillet and coat it with olive oil.
- Pour in the mixture to make a flatbread, and cook each side.
Step 5: Bake the tofu
- Toss pieces of firm tofu in gluten free flour.
- Drizzle with olive oil and tamari.
- Bake until golden.

Is roasted vegetable soup vegan and gluten free?
This one is vegan. It’s vegetables, spices and coconut milk, served with tofu and a chickpea flatbread.
The ingredients are naturally gluten free, and the flatbread and tofu use gluten free flours. But curry powder, garam masala and tamari can vary, so check the labels if you need to avoid gluten.
How do you add protein to vegetable soup?
Serve it with protein on the side. I have it with marinated baked tofu and a chickpea flatbread.
The dense, firm tofu gives me plenty of protein, and the chickpea flour adds even more. It also keeps me from getting hungry afterwards.
In my experience, not eating enough protein is one of the most common mistakes people make when they try vegan eating, and it’s often why they give up. A meal like this one makes it easy.

How long does roasted vegetable soup take to make?
Roast the vegetables until they’re cooked and browned, and let them cool. After blending, the soup cooks for about 15 minutes, plus a little longer while you adjust the taste.
Can I make it spicier?
Yes. Swap the Malay curry powder for a hotter curry powder.
How do I make the soup creamier?
Add more coconut milk. I added more for this batch.
What tofu is best for baking?
Firm blocks. I like to buy them from my local health food shop, because I find they have fewer additives.
