Introduction to eggplant chickpea curry

Eggplant chickpea curry is roasted eggplant and red capsicum simmered with chickpeas, tomatoes, coconut milk, shallots, garlic, ginger, fresh turmeric and warming spices. It’s vegan, easy to make, and the chickpeas make it a filling meal. Once everything is in the pan, it simmers for about 15 to 20 minutes.

This is an easy recipe, and it’s very satisfying. The flavour is rich, partly from roasting the eggplant and capsicum, and partly from the mix of spices. The coconut milk and tomatoes add to that rich taste.

Plus, chickpeas are a great source of plant protein. When I have a curry like this, I don’t get hungry.

Ingredients for eggplant chickpea curry

Here are the ingredients for this Flametree Yoga Studio dish.

The vegetables

  • 1 large eggplant, cut into cubes (you can keep the skin on)
  • 1 large red capsicum
  • Olive oil, to sprinkle over the vegetables for roasting
  • 3 shallots
  • A knob of fresh turmeric
  • A knob of ginger
  • 4 cloves of garlic

The spices

  • 2 teaspoons of coriander
  • 1 teaspoon of paprika
  • 1 teaspoon of garam masala
  • 1 teaspoon of cumin
  • 1/4 teaspoon of cayenne pepper
  • Salt and pepper, to taste

The chickpeas and sauce

  • 1 can of full cream coconut milk
  • 1 can of tomatoes
  • 1 can of chickpeas, or 1 cup of cooked chickpeas

Dried chickpeas, soaked overnight and then cooked on low heat for 2 hours, are so much tastier than tinned chickpeas. I recommend buying organic chickpeas in bulk.

Roast the eggplant and red capsicum first. Baked eggplant is an often forgotten delight.

I recommend buying organic chickpeas in bulk. They taste better than tinned, and are usually larger.

How to make eggplant chickpea curry

Use these steps to make this roasted eggplant and red capsicum chickpea curry.

Step 1: Roast the eggplant and capsicum

  • Preheat the oven.
  • Cut the eggplant into cubes, and cut up the red capsicum.
  • Lay the vegetables on baking paper and sprinkle them with olive oil.
  • Roast until cooked, then put them aside.

Step 2: Prepare the shallots, garlic, ginger and turmeric

  • Slice the shallots.
  • Finely cut the garlic, fresh turmeric and ginger.

Step 3: Build the curry

  • Fry the shallots in a little oil until aromatic.
  • Add the ginger, garlic, turmeric and the dry spices. Add a little water so it doesn’t dry out.
  • Add the chickpeas, tomatoes and coconut milk, and the roasted eggplant and capsicum. Stir everything together.

Step 4: Simmer, taste and serve

  • Turn the heat down and simmer for about 15 to 20 minutes.
  • Taste, and add salt and pepper as needed.
  • Serve with rice or quinoa. For extra protein, add cooked marinated tofu or tempeh as a side dish.

When I have a chickpea curry like this, I don’t get hungry. And protein helps build strength.

Is eggplant chickpea curry vegan and gluten free?

It’s vegan. Every ingredient comes from plants, and the creaminess comes from coconut milk.

The vegetables, chickpeas and single spices are naturally gluten free. Spice blends like garam masala can vary, though, so check the label if you need the curry to be strictly gluten free.

Roasting gives the curry its rich flavour. The roasted eggplant and red capsicum, together with the mix of spices, are a big part of why it tastes so good. The coconut milk and tomatoes do the rest.

For flavour, I think so. Dried chickpeas soaked overnight and then cooked on low heat for 2 hours are so much tastier than tinned chickpeas.

Do I need to peel the eggplant?

No. You can keep the skin on. Just cut the eggplant into cubes before roasting.

Can I use tinned chickpeas?

Yes. Use 1 can of chickpeas, or 1 cup of chickpeas you’ve cooked yourself.
