This is an easy recipe that is very satisfying. It is a rich flavour, due in part to the roasted eggplant and capsicum, as well as the mix of spices. Coconut milk and tomatoes also add to its rich taste.

Plus, chickpeas are an excellent source of protein.

Roasted Eggplant & Red Capsicum Chickpea Curry

Ingredients for Roasted Eggplant & Red Capsicum Chickpea Curry

Here are the ingredients for this Flametree Yoga studio dish.

  • 1 large eggplant, cut into cubes.- Can keep skins on.
  • 1 large red capsicum
  • 3 shallots
  • knob of tumeric
  • knob of ginger
  • 4 cloves of garlic
  • 2 teaspoons coriander
  • 1 tsp paprika
  • 1 tsp garam masala
  • 1 tsp cumin.
  • 1/4 tsp cayenne pepper
  • 1 can of full cream coconut milk.
  • 1 can of tomatoes
  • 1 can of chickpeas or a cup of cooked chickpeas
  • salt & pepper to taste
  • Dried chickpeas soaked overnight and then cooked on low heat for 2 hours are so much tastier than tin chickpeas.

How to make Baked Eggplant & Red Capsicum Chickpea Curry

Use these steps, to make this Baked Eggplant & Red Capsicum Chickpea Curry.

  • Preheat oven. Cut eggplant and capsicium. (see above picture)
  • Lay vegetables onto baking paper and sprinkle with olive oil.
  • Roast until cooked and put aside.
  • Slice shallots
  • Cut finely, garlic, Tumeric and ginger
  • Fry shallots until aromatic.
  • Add ginger, garlic, turmeric and dry spices. Add a little water so it doesn’t dry out.
  • Add the chickpeas, tomatoes, and coconut milk, and stir everything together.
  • Turn the heat down and simmer for about 15-20 minutes.
  • Taste, add pepper and salt as needed.
  • Serve with rice, or quinoa. For extra protein, add cooked marinated tofu or tempeh as a side dish
