Black Bean Curry Recipe Vegan Option. It’s a meal in itself with rice or quinoa. Or, you can add other dishes such as my examples below. This is a top curry recipe for yogi recipe lovers.
Black bean curry ingredients
- Two medium white onions
- 3-4 cloves of garlic
- About a teaspoon of grated ginger
- 2 teaspoons of coriander powder
- a teaspoon of garam masala
- a teaspoon of smoked paprika
- one teaspoon of chili powder
- half a teaspoon of turmeric powder
- one can of cooked black beans
- a full can of coconut milk (ideally organic)
- 3/4 of a cup of water
- salt and pepper to your taste
- a couple of tablespoons of olive oil for sauté
- one packet of washed baby spinach or equivalent
- Finely cubed orange, sweet potato
How to do this bean curry
- Chop onions and garlic quite finely
- Add oil to pan
- Heat oil and add onion, garlic and ginger
- Sauté it and watch it does not burn
- Add the other spices and stir well
- Stir in sweet potato and coconut milk, and let it simmer until sweet potato is cooked
- Drain and rinse black beans under running water
- Add spinach and black beans
- Let it simmer for 6-8 minutes
- Add salt and pepper to taste and garnish with parsley
Recipes Extra tips and comments
- Serve with steam rice or quinoa
- If you wish, serve also other side vegetable dishes like broccoli and mushrooms stir fried.
- Or serve with sweet potato chips cooked with a weber
- Or serve with whatever else you like
- Tastes even better the second day… so you can make enough for that too
- Because black beans are such high protein, even when I’m doing intermittent fasting (by only eating one to two meals a day), I don’t get hungry
- Black beans also digest very easily, without the gas that tend to happen more with tofu (even though I think its also important for vegans to eat tofu from time to time).

I recommend you get more protein from both black beans, and chick peas.
As I mentioned, they’re great alternatives to vegan protein like tofu, and digest probably easier.
As well, they’re quite tasty, even when cooked fairly simply.
