Chia Coconut Milk Smoothie With Soft Tofu: A Layered Breakfast Smoothie

Chia Coconut Milk Smoothie With Soft Tofu.

A Layered Smoothie With Seasonal Fruit, And No Added Sugar.

A Short Recipe Note: Chris’s Notes On Amounts And Steps Are Coming.

Introduction to chia coconut milk smoothie

This chia coconut milk smoothie is chia seeds and coconut milk in the bottom layer, with soft tofu, vanilla and fruit such as pineapple on top. I use whatever fruit is in season, and I add no extra sugar. This page is a short recipe note: I have not written down the amounts and steps yet, and they will be added.

In May 2024 I went to Melbourne to be on a yoga teacher trainee assessment panel for Iyengar Yoga Australia. The yoga studio where the assessments were held prepared a fantastic breakfast for all of us assessors. Mine was specially made, because I am gluten free. So instead of bread, I was given a delicious chia fruit smoothie.

I loved it so much that when I got home to Darwin I started making Darwin smoothies with chia, coconut milk and soft tofu. Then I mix in whatever Darwin fruit is in season, and some other fruit like berries. Whenever I can, I choose very low sugar fruit such as avocados or strawberries. I don’t add any extra sugar, as the fruit has enough in it.

I don’t have one every day, far from it. But it has been fun experimenting with chia, black rice pudding, tapioca pearls (sago) and various seeds. I often make a breakfast like black rice pudding, then add the smoothie to it, and sometimes the whole thing becomes a very filling smoothie bowl.
