Mango Smoothie Bowl With Soft Tofu, Banana & Goji Berries: Vegan

Mango Smoothie Bowl With Soft Tofu, Banana And Goji Berries.

A Creamy, Dairy Free Mango Bowl, Topped With Pear, Blueberries And Coconut.

Makes Two Bowls. Perfect For Breakfast, Or Dessert At Lunch Time.

Introduction to mango smoothie bowl

This mango smoothie bowl is a large ripe mango, a frozen banana, a packet of soft tofu and the seeds of a vanilla pod, blended until smooth. Then it is topped with pear, blueberries, soaked goji berries, desiccated coconut and a few pieces of mango kept aside. It is vegan, has no added sugar, and this amount makes two bowls.

It is perfect for breakfast, or as a dessert at lunch time. The frozen banana is the secret: it makes the smoothie thick and creamy, so it sits in the bowl and holds the fruit on top.

Decorate it however you like. I kept five or six pieces of mango for the top, and arranged the pear, blueberries, goji berries and coconut around them.

Is this mango smoothie bowl vegan?

Yes. Soft tofu takes the place of yoghurt, so there is no dairy. It is also gluten free, and there is no added sugar, because the fruit is sweet enough.

Why use a frozen banana in a smoothie bowl?

A frozen banana makes the smoothie creamy and thick. That is what lets the smoothie sit in the bowl and hold the toppings.

How much vitamin C is in mango?

Raw mango has about 36.4 mg of vitamin C in every 100 g, according to the USDA FoodData Central database. One large mango goes into this recipe.
