Fresh Tomato Soup With A Japanese Twist: Vegan, Filling & No Cream

Fresh Tomato Soup With A Japanese Twist: Vegan, Filling & No Cream.

Ripe Tomatoes, Leek, Celery And Green Beans, Seasoned With Tamari And Mirin.

A Beautiful Soup. Full Of Flavour, Filling And Very Satisfying.

Introduction to my tomato soup

This fresh tomato soup is thick, vegan and made without cream. You cook 8 ripe tomatoes with celery, slip off the skins and blend them, then simmer the soup with sautéed leek, garlic and very finely cut green beans. A tablespoon each of tamari and mirin gives it a gentle Japanese twist, and you season it with salt, chilli and pepper to suit your taste.

It’s a beautiful soup. It’s full of flavour, it’s filling, and it’s very satisfying.

The tamari (a Japanese soy sauce) and the mirin (a sweet Japanese rice wine for cooking) are what make it different from most tomato soups. They add a savoury depth and a touch of sweetness.

For a bigger meal, I add baked tofu squares or slices of marinated mushroom.

How do you make tomato soup thick without cream?

Cook the tomatoes and celery well, and blend them. Then simmer the soup with the leek, garlic and green beans until it thickens. There’s no cream, butter or stock in this soup.

Is this tomato soup vegan and gluten free?

Yes, it’s vegan. It’s made only from vegetables, tamari, mirin and seasoning.

Tamari is usually made without wheat, but brands vary, and so does mirin. If you need the soup gluten free, check both labels.

I cook the chopped tomatoes first, then take the skins off before blending.

How much vitamin C is in tomatoes?

Raw ripe tomatoes have about 13.7 mg of vitamin C in every 100 g, according to the USDA FoodData Central database. They’re also about 95% water.
