Sago Dessert With Coconut Milk Recipe

AKA … Tapioca Pearls Dessert Sago With Mango Or Blueberry.

In the picture, you can see sago dessert with coconut milk. Read on for how to make coconut sago dessert with blueberries, or other fruit. I found it better than my mum’s! (It’s also known as tapioca pearl dessert sago.)

This classic sago dessert is now often known by various versions of the more modern name of tapioca pearl dessert sago.

But, its essentially the same as my mum was making for us many decades ago. However, hers was a bit plainer than the options I show below.

In case you’re wondering, sago does not have much protein. Instead, I made it for old times sake, and because it’s delicious.

Tapioca pearl dessert sago, or sago dessert with coconut milk (as my mother would have described it). In the glasses, the dots you can see the so-called “pearls”.

Ingredients: sago dessert with coconut milk

Here are the main ingredients:

  • a cup of tapioca pearls. (See picture below).
  • salt to taste
  • the vanilla scraped out of a vanilla pod, or vanilla essence (See picture below).
  • 3 quarters of a cup of plant based milk, such as Oat Milk, or Soy, or Almond. (How much exactly depends on how juicy the fruit is).
  • cup of coconut milk
  • 1-2 mangoes
  • 1-2 bananas
  • pundit of blueberries
  • coconut yoghurt for topping as shown in glass.

By the way, I only recently noticed that Oat Milk is not gluten free. But the other types I mention are gluten free.

These vanilla pods, available from Woolworths, are both the best value for money, and also easier to use to get the “sweetness” and flavour that gives you a good alternative to sugar.

How to make coconut sago dessert

  1. Soak tapioca pearls overnight.
  2. Next day, bring a large saucepan of water (8 cups) to boil.
  3. Water must be boiling as you then add the pearls.
  4. Cook & keep stirring regularly so it does not go lumpy… for about ten minutes on medium heat… or until the pearls become translucent. (They’ll still have a tiny white centre though).
  5. Remove from heat, & cover, & wait another 10-15 minutes. The pearls will become completely translucent.
  6. Drain the water out.
  7. Then, rinse pearls under cold water
  8. Mix together, after pearls have cooled, the coconut milk, other plant based milk, & vanilla pod.
  9. Puree the fruit of your choice. I used mango / banana for one, and blueberries for the others.
  10. Mix the pearls (sago) into the puree… using a bowl.
  11. Pour the final mix into your parfait class.
  12. Chill for a couple of hours.
  13. Serve with fresh mango or blueberries on top, plus coconut yoghurt, as in the picture.

Make sure you have plenty of water when boiling the sago.

At least in modern Australia, a parfait is any layered dessert in a glass. So, here’s another delicious fruit and chia parfait I made recently.

Chia is 15-19% protein. As a result, it’s another excellent way to get all the benefits of protein. But, use lower sugar fruit, and don’t overdo the amount of it!

The tapioca pearls, or sago, I get at an Asian supermarket near me. So, these pearls are the basic ingredient for your tapioca pearl dessert sago delight.

Here is a tapioca pearls and mango variation of this classic sago pudding. Fruit is also blended into the sago mix, similar to how I blended in the blueberries in the picture you see above. Notice the translucent “pearls” in the mix.
