Here’s the best baba ganoush vegan recipe I’ve tested, and tweaked. Plus, see how a chunky baba ganoush recipe is best. (BTW, in the UK, it’s called an aubergine baba ganoush recipe). Plus, here are my learnings about it along the way, such as the importance (for taste), of having it be slightly lumpy, and mixing by hand. See more on this below.
You’ll at least have had vegan or vegetarian baba ganoush at a Lebanese restaurant.
Pardon my ego, but I enjoyed this version of it better than almost any other I’ve found, at restaurants or supermarkets.
It may not be as smoky as some you’ll buy, but I think it’s also healthier.
Apart from being tastier, it’s not too strong in it’s flavour. So, it’s very moreish.
Plus, it will keep in the fridge at least 3 days, so you can keep it for snacks, or to have with many of the other dishes included on this Flametree recipe page.

Ideally, combine it with flat bread made from nutritious chickpea flour. (That’s another yummy recipe coming from us soon. I, (Christine), also prefer it to any flat bread I’ve been able to buy).
Especially if you combine it all with my baked falafel recipe, you’ve certainly got a nutritious, vegan, yummy meal. (Baked falafel keeps clear of deep frying).

In summary, eggplant (aubergine) has many benefits for heart, circulation, weight, anemia, blood sugar, memory, brain, & gut health. A lot of benefits are due to it being high in fiber.
I’ve become a lot more interested in it since I’ve learned the wide range of eggplant benefits, and how much better it tastes if you use a homemade baba ganoush vegan recipe such as this one.
Plus, of course, with a homemade baba ganoush recipe, you’re also avoiding all the additives that are sneaked into the supermarket or restaurant versions, or both.
I find it’s the additives that often cause upsets, bloating, and more.
Ingredients: homemade baba ganoush vegan recipe
Here are the main ingredients.
- 2 medium eggplants (aubergines)
- 2 medium garlic cloves, minced
- A quarter cup of tahini
- Juice of one lemon
- Salt and pepper to taste
- One tsp of za’atar
- Olive oil… 1-2 tablespoons
- A quarter tsp of cayenne pepper.

How to make the baba ganoush vegan recipe
Make this dish with these steps.
- With eggplants, wrap in foil and bake in 200 Celsius oven until soft (15-20 minutes)
- Remove foil
- Cut eggplant lengthwise and let it cool
- Scoop the flesh of eggplant into a strainer over a bowl
- Allow water to drain
- Mix together egg plant, minced garlic, spices, lemon juice, olive oil.
- Blend above mix by hand. Don’t use your blender. Hand mixing will keep it a chunky baba ganoush recipe.
- Chill in fridge for up to an hour
- If you want a hotter baba ganoush, add some chili flakes.
- Some also add yoghurt, but only use dairy (Greek) yoghurt. (Coconut yoghurt does not work well for this).
