Quinoa Noodles Vegetable Curry Recipe

A quinoa noodles vegetable stir fry is delicious and healthy. So, see how to make this recipe, and why these noodles are better than others.

In Darwin, you can sometimes get these noodles at shops like Greenies. But they’re often sold out too.

Mail order will definitely work for you, but you need to order enough to make it worthwhile after the postage.

So, if you like them, consider ordering them with a friend.

The package looks like what you see in the picture. I’ve included some other snips from the same box, to let you know more about them.

By the way, Woolworths does have various other plant based pastas… such as from red lentils, chickpeas, ordinary peas, and other pulses. I will do a recipe on one of these soon.

Introduction about this recipe, & its options

With this recipe you can:

  • Vary hotness to suit
  • Include mild  curry powder, and otherwise adjust hotness to suit you
  • There is no added sugar except mirin
  • The recipe allows you the best mix of vegetable, tofu, and and pasta.
  • These quinoa noodles, are both organic and whole meal, as you can see in the pictures.
  • Minimal oil is necessary.
  • It’s delicious, and has a slightly nutty taste
  • Use different varieties of mushrooms if you want, such as oyster mushrooms. (Ours were large flat white).
These quinoa noodles have a lower GI than conventional noodles, but they are still carbs.
However, because they have more than double the protein of rice noodles, they also fill you up more.
As a result, you feel less hungry.

Spices for quinoa noodles stir fry

  • a small red or brown onion
  • 1 clove of garlic
  • a tablespoon of grated ginger
  • teaspoon of turmeric
  • salt and pepper to taste,
  • olive oil for stir fry
  • a quarter teaspoon of smoky paprika
  • or chili flakes to vary heat to your taste
  • Sesame oil… few dashes
  • teaspoon of curry powder
  • a tablespoon of mirin and tamari (soy)
  • Sesame seeds to sprinkle

No added sugar except what’s in the Mirin sauce

Other ingredients for the Quinoa noodles stir fry

  • a package of 4 mini-slabs (or squares) of Japanese flavoured tofu, finely sliced
  • pepper to your taste
  • a large mushroom, finely sliced
  • one medium carrot, finely sliced
  • a cup of cabbage cut to smaller pieces
  • one small to medium head of broccoli, finely cut
  • a packet of quinoa noodles… see pictures for details
  • 1 fresh, small to medium red capsicum chopped finely
  • 1 medium to small cob of fresh corn
  • a few chopped green beans
  • cut up continental parsley to garnish at end.

Boil the noodles until chewy, & then wash

Run cold water over the noodles… as soon as they are cooked. Then, they’re not gluggy.

How to stir fry vegetables and tofu

  • heat wok, add olive oil
  • sauté garlic, onions, turmeric, ginger in wok
  • add carrots and capsicum
  • stir well
  • add mushrooms… keep stirring
  • add capsicum,  broccoli, spring onions, and cabbage
  •  add the cooked-marinated tofu… see below
  • add noodles after running under cold water as soon as they are cooked from boiling in water… see picture above
  • salt and pepper to taste
  • turn off the heat and add a dash of sesame oil
  • garnish with sesame seeds and parsley.

  • Tofu is filling, and nutritious.
  • So you’ll find you will be less likely to want to snack between meals.
  • For a more spicy version, add chili flakes
