Best, easy, healthy vegetarian “laksa” recipe, or vegetarian laksa soup recipe. It’s tasty, but basic. Here, we also included some finely chopped, organic tofu. You can make hot, medium, or mild versions.

I put laksa in quotation marks, because strictly speaking, many would say it is not a classic laksa. I agree.

Depending on your views about this, you may therefore prefer to all it a soup or broth. So, I’ve also done this in one of the headings above.

Nevertheless, for my household, we thought it was as close a traditional laksa as we wanted to go. It certainly tastes very similar to laksa.

But, we also think it tastes better. Plus, as I’ve outlined, it has various features that you can’t normally buy.

If you make it, remember that laksa, or these kinds of soups, are messy, although delicious.

So, have a bib, or don’t eat with white clothes, or your best clothes!

The advantages of quinoa noodle mixes

Best of all, quinoa noodles (or mixes with quinoa), have higher protein than rice noodles, as well as more iron, magnesium and fiber.

The extra protein means you feel fuller and snack less.

In addition, quinoa also has a low glycemic index. So, that means its also better in terms of diabetes issues.

At the very bottom of this post, I’ve included an interesting comparison table.

In short, quinoa is a healthier noodle option, and better for managing weight.

So dietician, Dr Katz, says that quinoa noodles:

“provide vitamins and minerals that you may not get from white pasta.”

By the way, white pasta is made from semolina.  So, it’s different again from rice noodles.

As you may know, one problem with white pasta, and rice noodles, is that it’s especially easy to eat more of it than you should (because they feel less filling).

That’s just another reason why I, Chris Lalor, suggest you try quinoa noodles (if you can get them).

Below, see how to make this delicious and easy vegetarian “laksa” recipe. With organic noodles too. Make an easy & healthy laksa soup. The brown cubes you see are baked tofu.

Spices for this vegetarian laksa recipe

  • a small red or brown onion
  • 3-4 medium cloves of garlic
  • a tablespoon of grated ginger
  • teaspoon of fresh turmeric
  • tablespoon of fresh ginger
  • salt and pepper to taste,
  • olive oil for stir fry sauté
  • a quarter teaspoon of smoky paprika
  • or chili flakes to vary heat to your taste
  • desert spoon of sesame oil
  • one and half teaspoons of medium hotness curry powder
  • a tablespoon of each of mirin and tamari (soy)
  • Sesame seeds to sprinkle
  • lime juice of one lime
  • one heaped teaspoon of coriander
  • three finely chopped spring onions
  • half teaspoon of cumin.

Vegetarian Laksa Recipe ingredients

Ingredients: Vegetarian Laksa Recipe | Best Healthy, Vegan, & Vegetarian Soup

  • half a block of extra firm tofu, drained of water
  • 3 cups of vegetable stock (once mixed with hot water)
  • pepper to your taste
  • one medium carrot, finely sliced
  • one small to medium head of broccoli, finely cut
  • a packet of quinoa noodles… see pictures for details
  • 1 fresh, small to medium red capsicum chopped finely
  • 1 medium to small cob of fresh corn
  • a few chopped green beans
  • 2 medium sticks of celery, finely sliced
  • 6-8 snow peas
  • 2 medium deskinned tomatoes
  • a tablespoon of corn flower
  • a tin of coconut milk
  • sesame seeds… to sprinkle at end.

Cook the noodles in the same way as in this quinoa stir fry recipe, including running cold water over them.

Run cold water over it… as soon as cooked

How to

  • heat oven to 200 degrees Celsius
  • coat tofu with cornflower
  • mix tamari soy with small amount of water
  • coat baking tray with small amount of olive oil
  • put tofu, & cornflower on baking tray
  • bake tofu in oven until it puffs up and is golden… watch closely so as to not burn
  • heat wok, add olive oil, and sesame oil
  • sauté garlic, onions, turmeric, ginger in wok
  • add vegetables… all except snow peas and spring onions
  • cook, and stir frequently for about 5 minutes
  • add broth, coconut milk and soy sauce
  • bring to boil
  • simmer for 8-10 minutes until mostly cooked, but not overcooked
  • add snow peas, lime juice, and spring onions
  • while above is happening, cook noodles in boiling water
  • add noodles after running under cold water as soon as soon they are cooked from boiling in water… see picture
  • salt and pepper to taste
  • turn off the heat
  • garnish with sesame seeds
  • can add more spring onions and sesame seeds if you prefer
  • if you like it hotter, add chili flakes or fresh chili
  • mix in bowl or bowls and eat.
