This original Lebanese hummus recipe is maybe the best Lebanese Hummus recipe too?

Among my favourite middle east vegetarian recipes.

Here’s the best authentic hummus recipe I’ve found, and further tweaked. It’s maybe the best original Lebanese hummus recipe too, but that’s a more contentious issue. But, it’s certainly among the great Middle East vegetarian recipes. Plus, it’s a hummus recipe vegan option.

The documentary movie “Make Hummus Not War” outlines the rivalry amount Middle East people over the use of the word “hummus”.

I’m certainly not discussing that, but I recommend the movie (which is on Docplay).

I originally sampled Middle East vegetarian recipes at the wonderful Lebanese hummus restaurants on Sydney road in Melbourne. So, given the many happy times I’ve had at such restaurants, it was great to do some homemade versions. (For instance, also check out my oven baked falafel recipe, and more to come).

But whatever the origin of “hummus”, it’s delicious. Plus, it has a wide range of wonderful benefits for your health, starting with a 9% protein level.

For instance in the diagram below, you can see some of the benefits of protein rich food like hummus.

It’s also an excellent way to the fibre that works so well for better digestion.

This Lebanese hummus recipe is delicious way to ensure you get more of the many benefits of protein. such as those in the diagram above.

Ingredients: best authentic hummus recipe

Here are the main ingredients,

  • a can of chickpeas… or dried
  • half cup of good quality tahini
  • 2 cloves of garlic
  • juice of one lemon
  • olive oil
  • half tsp of ground cumin
  • half tsp of baking soda… optional
  • sprinkle of paprika
  • 2-4 tablespoons of cold water
  • salt to taste.

This was the dish I cooked using the best authentic hummus recipe I found. It’s also a great hummus recipe vegan option.

How to make the best authentic hummus recipe

Here’s how to make a version of what I’m calling the best authentic hummus recipe. But, depending on your preferences, you may prefer to call it your Lebanese hummus recipe dish.

Anyway, leaving the politics aside, make it with these steps.

  1. blend chickpeas, tahini, lemon juice, garlic, tsp of olive oil, cumin, baking soda, into a paste.
  2. add water to get it the consistency you like, but not too runny.
  3. taste and add salt to your preference
  4. serve onto a dish
  5. swirl into a circular pattern
  6. Garnish with olive oil and sprinkle of paprika
  7. put a few cooked chick peas in middle
  8. sprinkle with parsley if you want

Of course, if you wish, you can also make your own tahini.

I buy Tahini, but I always tip up the jar in the supermarket to check it’s runny enough (and not dried out). Plus, I prefer the hulled version.

By the way, if using dry chickpeas, then soak them overnight, and then boil until soft.

Some of the many combinations I made with the best authentic hummus recipe I found. In this case, it’s oven baked falafel, and a simple salad with very healthy red cabbage.
