In tropical Australia, from around mid-October each year, mangos are plentiful, and deliciously ripe. This recipe is a great way to use some of them.
How to make mango dessert recipe | Quick steps
Mango dessert recipe is made by dissolving agar agar (jelly) powder in water & coconut milk, & simmering it, for a total of say 10 minutes. Then, mix with a mango puree. Add fruit pieces, & set in molds for 2 hours. Serve with fresh fruit & coconut yoghurt.

But essentially, the quick steps above show you just how easy and simple it is.
There’s also obviously lots of other variations of this recipe, and similar ones.
But, for now, you can see just how simple it can be to make a different jelly pudding that everyone will love.
Mango agar agar jelly | A top Darwin mango dessert recipe

A Darwin mango dessert recipe with agar agar powder to make a delicious jelly pudding. One key secret is to embed fresh mango into it, as in the picture. Tropical passionfruit is also a very tasty addition.
Ingredients: mango dessert recipe (aka mango agar agar jelly)
Here are the ingredients for your Darwin mango recipe pudding (or for wherever you are).
- One and half tsp of agar agar powder (see picture below of a good brand we found at an Asian food emporium).
- One to one and a half cups of coconut milk
- A quarter. to half a tsp of salt to your taste
- 2 medium, very ripe mangoes (but not overly ripe)
- 2 cups of water.
Plus, whatever other delights you want to serve with it such as tropical passionfruit, additional fresh mangoes to chop and put on top, and coconut yoghurt (like you see in some of the pictures).

Best of easy mango fruit dessert recipes with agar powder to turn it into a jelly. In this picture, it was set to a jelly in a flat dish I otherwise use for food storage. Of course, although you shouldn’t overdo eating mangoes, they have an impressive range of nutrients and health benefits.
How to make one of my favourite mango fruit dessert recipes
Make your mango dessert recipe, or mango agar agar jelly, with these steps.
- Add agar agar to water
- Dissolve and stir
- Bring mix to boil in a medium to large saucepan
- Add half of the coconut milk and stir in
- Bring back almost to boiling and then add remaining coconut milk
- Cook mix for about 5 minutes
- Then, pulverise the mangos into a paste or puree … such as in the blender
- But keep about half of the mango separately, and cut into small pieces
- Add the agar mix to the mango puree
- Sprinkle with some salt
- Taste test the sweetness of it. Puree more mango and add it you wish.
- Simmer for a couple more minutes
- Pour into a mold shape or small bowl
- Add the mango pieces to the mix that you’re going to set
- Chill in the fridge for a couple of hours.
Serve in slices with coconut yoghurt, more fresh mango, passionfruit or whatever you fancy. See the pictures.
By the way, agar agar won’t set unless it is brought to the boil in the cooking process, as outlined above.
So, as you can see, this Darwin mango recipe for a jelly pudding is an excellent and quick way to use some of your Darwin mangoes (or wherever you get them).
