  • 1 large sweet potato
  • 2-3 medium avocado
  • 3 baby beet roots
  • ½ corn cob
  • ½ medium capsicum
  • 3 spring onions
  • 6 cherry tomato
  • 1 Lebanese cucumber
  •  1 can black beans
  • Mint leaves – a few chopped
  • Handful of fresh coriander
  • Pepper and salt to taste.

  • Tahini 1 tablespoon
  • Olive oil, 2 tablespoons
  • Pepper & salt to taste
  • Juice 1 lime
  • Dijon mustard. 1 tsp.

If your budget can stretch to it, I recommend using organic versions of as many of these ingredients as possible.

Follow these steps to make your salad.

  • Roast the Coolalinga sweet potato
  • Allow to cool and cut into cubes
  • Cut tomato, cucumber capsicum, beetroots into small cubes
  • Finely slice spring onions
  • Cut corn off cob
  • Deseed Coolalinga avocados and cut into medium-sized cubes
  • Mix  all together and toss gently in a salad style
  • Let sit 1/2 hour, then serve with dressing below, or any other salad dressing you prefer.
