Introduction to avocado salad
This avocado salad combines roasted sweet potato, avocado and black beans with baby beetroot, corn, capsicum, cherry tomatoes, cucumber, spring onion, mint and coriander, and a simple tahini, lime and Dijon mustard dressing. It’s vegan, and it’s filling enough to be a meal on its own.
Coolalinga, in Darwin’s rural area, is surrounded by wonderful tropical produce, and Flametree teaches yoga at Coolalinga Central. To me, this salad is a lovely way to use some of the area’s top fruit and vegetables.
I like it with grilled tempeh slices on the side. They’re very tasty, and they keep me going until the next meal.

Ingredients for avocado salad
Here are the ingredients for this Flametree Yoga Studio salad and its dressing.
The salad
- 1 large sweet potato
- 2 to 3 medium avocados
- 3 baby beetroots
- Half a corn cob
- Half a medium capsicum
- 3 spring onions
- 6 cherry tomatoes
- 1 Lebanese cucumber
- 1 can of black beans
- A few mint leaves, chopped
- A handful of fresh coriander
- Pepper and salt, to taste
The tahini dressing
- 1 tablespoon of tahini
- 2 tablespoons of olive oil
- Juice of 1 lime
- 1 teaspoon of Dijon mustard
- Pepper and salt, to taste
Here in the Darwin and Coolalinga region, we’re lucky to have so many of these fresh ingredients grown close by, in the NT’s Rural Area. Around Coolalinga you’ll also find some large, creamy organic avocados. If your budget can stretch to it, I use organic versions of as many ingredients as possible.

How to make avocado salad
Use these steps to make this avocado salad and its tahini dressing.
Step 1: Roast the sweet potato
- Roast the sweet potato.
- Allow it to cool, then cut it into cubes.
Step 2: Chop the vegetables
- Cut the tomatoes, cucumber, capsicum and beetroots into small cubes.
- Finely slice the spring onions.
- Cut the corn off the cob.
- Deseed the avocados, and cut them into medium sized cubes.
Step 3: Mix and rest
- Drain the black beans.
- Mix everything together with the mint, coriander, salt and pepper, and toss gently.
- Let it sit for half an hour.
Step 4: Make the dressing and serve
- Mix the tahini, olive oil, lime juice, Dijon mustard, salt and pepper into a smooth dressing.
- Adjust the dressing to suit your taste.
- Serve the salad with the dressing, or any other salad dressing you prefer.

Is this avocado salad vegan and gluten free?
It’s vegan. Every ingredient is naturally gluten free, but Dijon mustard and canned bean labels can vary, so check them if you need to avoid gluten.
What is tahini dressing?
Tahini is a paste made from ground sesame seeds. Mixed with olive oil, lime juice, Dijon mustard, salt and pepper, it makes a creamy salad dressing.
Why add black beans to an avocado salad?
Black beans add plant protein and fibre, so the salad becomes a filling meal. Canned black beans are cheap, and you can often find organic ones at the supermarket.

Do I roast the sweet potato first?
Yes. Roast the sweet potato, let it cool, then cut it into cubes before adding it to the salad.
How long should the salad sit before serving?
Let it sit for about half an hour after mixing, then add the dressing and serve.
Can I use a different dressing?
Yes. The tahini dressing is my favourite, but any salad dressing you like will work.
What goes well with this avocado salad?
