Roasted Sweet Potato Quinoa And Black Bean Salad

Delicious roasted sweet potato, pumpkin, quinoa and black bean salad, or just roasted sweet potato and black bean salad. Also known as roasted sweet potato and black bean salad recipe

As you may have seen, I’m delighted with how black bean is tasty, and nutritious. It comes originally from South America. Maybe that was the power behind all those ancient South American empires.

Spices needed

  • a small red onion
  • 1 clove of garlic
  • a half teaspoon of smoked paprika for veggies
  • a quarter teaspoon of smoked paprika for dressing
  • Half teaspoons ground cumin for veggies
  • a quarter teaspoon of ground cumin for dressing
  • quarter of a teaspoon of chill powder for veggies
  • half quarter of chili powder for veggies
  • salt and pepper of veggies to taste, or otherwise
  • olive oil and lime juice for dressing

Other ingredients for this dish

  • Olive oil for baking dish
  • pepper to your taste
  • Finely cubed, medium size, orange, sweet potato & pumpkin
  • a cup of finely chopped pumpkin
  • one cup of uncooked quinoa
  • 1 fresh red capsicum chopped finely
  • 1 medium to large cob of fresh corn
  • parsley to garnish… preferably continental
  • half a Cos lettuce
  • a tin of cooked black beans (ideally organic).

Cooking quinoa for your …

  • Start by cooking the quinoa.
  • Cook it just as if if were white rice.
  • So, put it in a saucepan and cover with water to the depth of a finger laid across the top of quinoa in the saucepan
  • Then, bring it to the boil & then turn down to a very low simmer
  • Takes about 15 minutes
  • It’s done when it fluffs up and dries out so it not wet and watery.

Cooked quinoa to the point where it fluffs up, but is soft, and a bit crunchy (but not hard in any way).

How To: Roasted Sweet Potato Quinoa And Black Bean Salad

  • pre-heat oven to 200 Celsius
  • place veg in baking dish, add 2 tablespoons of olive and coat vegetables with cumin, paprika, and chili flakes, and stir it in.
  • salt and pepper if you want
  • cook vegetables until cooked, but not mushy
  • rise and drain black beans
  • in a large bowl, add cooked quinoa, black beans, corn, capsicum, chopped onion, and mix well
  • Add roasted vegatables
  • mix a dressing olive oil, lime juice, cumin, turmeric, chili, garlic, and salt and pepper to taste
  • pour dressing on salad
  • serve by itself or with cos lettuce. It works well to spoon it into the fresh leaves.

Recipes Extra tips and comments

  • Black bean is very filling, and nutritious. So the salad can be a meal in itself.
  • But, you can also eat other dishes with it, such as Flametree’s chick pea and lentil curry menu. It’s also in the picture below.
