For me & others at our recent retreat, it was among top pumpkin and lentil recipes, and among the best lentil recipes Australia has. So, I rate it as a favourite pumpkin dahl recipe.

By the way, “Dahl” can also be spelt “dal”, “daal”, or “dhal”. In addition, dahl is an alternative name for lentils, including curried lentils. So please read this veg dahl recipe with that in mind.

Before you go to the detail, here’s the short version of the best lentil recipe Australia, (and I originally was taught it in Bali).

Veg dahl recipe?

Soak lentils overnight. Then cook. Steam pumpkin & blend to puree. Fry onions, & add half the lentils. Then, add spices like mustard seeds, cumin & garam masala. Add rest of lentils, puree, & coconut milk. Cook for another 15 minutes until it thickens, & serve.

Below, you’ll see the detailed ingredients and steps to deliver a delicious vegetable dahl.

Ideally, eat it with a nutritious, gluten free, flat bread like the one shown below, that I made with chickpea flour. (I’ll cover that recipe another time).

My favourite veg dahl recipe dish, including among curried versions. You can use it for brown or green lentils. 

Veg dahl recipe ingredients

So, here are the ingredients for vegetable dahl, using the green lentils in the picture below.

  • A cup of dry green or brown lentils
  • One red onion (alternatively shallots)
  • A cup of steamed pumpkin
  • A curry leaf, or 2 bay leaves
  • One teaspoon of garam masala
  • 1.5 tsp of cumin
  • 1 tsp of mustard seeds
  • A tsp of curry powder (a mild pre-mixed Malay curry powder)
  • One cup of coconut milk
  • A tsp of coriander powder.

Plus, if you prefer it hotter, then add some chili.

Ingredients for the best lentil recipes Australia option that I’ve found. (By the way, the organic coconut milk has only 1.8% sugar, and that’s considered healthy and low.)

How to make vegetable dahl

When you’re ready, make your veg dahl with these steps.

  1. Soak lentils in water overnight…with enough water to cover them
  2. Boil the lentils until cooked…about 30 minute… until they’re soft, but not mushy… so watch closely
  3. Steam the raw pumpkin
  4. Blend pumpkin into a puree… with enough water to do so
  5. Half cup of coconut milk
  6. Slice and fry onion
  7. Add lentils to onions
  8. Add curry leaf until onions are translucent
  9. Then, add half of lentils
  10. Fry with mustard seeds and cumin
  11. Add pumpkin puree, plus garam masala, and all remaining spices
  12. Then, stir well, and add rest of lentils
  13. Add rest of coconut milk
  14. Cook and simmer for about 10-15 minutes. It will thicken when cooked.
  15. Taste, and add salt and pepper.
  16. Serve salad, flat bread or whatever.

At most the places I’ve eaten, I been disappointed with dhal, or their version of veg dahl recipe. In particular, I often find that’s it’s so hot, that I can’t appreciate the many other flavours of vegetable dahl.

So I was delighted to eat this version as one of the many dishes at the Flametree Bali retreat.
