In my view, its among the best of baked Japanese eggplant recipes with miso. It’s also known as Asian roasted eggplant recipes, or an Asian baked eggplant recipe. Plus, I show you a variation for a simple Mediterranean roasted eggplant recipe, with zaatar.

The baked eggplant can be done with either a garnish from either the Middle East or Japan.

They’re each delicious, but different.

Each recipe is also created so as to be low in sugar.

By the way, although eggplant is low in protein, it has many other desirable nutrients for your body.

Asian baked eggplant recipe with miso in Japanese style

So-called Asian baked eggplant recipe with miso in the style originating in Japan. So, it’s also called Japanese baked eggplant (aka roasted eggplant). Here, they’re on the tray just baked.

Ingredients | Miso garnish from Japan

  • 3 medium globe egg plants… could be small thin ones as well…
  • 2 tbsp of white miso paste
  • A tbsp of tamari
  • 2 tbsps of mirin
  • two tsp of rice wine vinegar
  • 2 teaspoons of sesame oil
  • 2-3 tablespoons of olive oil.

Ingredients | Mediterranean option, with zaatar roasted eggplant

  • One and half tbsp of za’atar
  • Half a tsp of paprika
  • Quarter tsp of salt
  • Good size garlic clove
  • 2 tablespoons of olive oil
  • 2 medium size globe eggplants such as you see in the picture.

If you have not run across it before, Za’atar is a popular Middle East spice, pronounced (zaah-tur) in English. It’s a spice blend which adds great flavour to many dishes.

How to make either of the baked eggplant variations

  • Preheat oven to 200 Celsius
  • Same technique for each of the garnishes above
  • Slice eggplant in half, long ways, as in the picture
  • Cross hatch the eggplants with a sharp knife, as you see in the picture
  • Be sure not to cut through bottom of eggplant
  • Season with some olive oil and salt
  • Turn eggplant upside down, so cross hatch faces down
  • Bake approximately for 15 minutes.
  • Turn it over to face upwards
  • With either garnish, brush it into the cross hatch and across top of eggplants
  • Bake for approximately 30 minutes
  • With the miso garnish, it will bubble up when cooked… so keep an eye on it as you go
  • If a big eggplant, could take up to 45 minutes.

Extra tips

With the Middle Eastern garnish, serve with tahini sauce, and add some chopped parsley on top, as well as coconut yoga.

Plus, serve with salad, tempeh, baked tofu, or whatever else you fancy.

In addition, with the miso Japanese garnish, serve it with a topping of finely chopped spring onions, and sesame seeds.

By the way, each can be served hot or cold. The flavours will improve with more soaking in.

Whichever version you’re making, cross hatch it carefully with a knife, without cutting through the skin. Then, apply the garnish of your choice.
