Vegan baked chickpeas and vegetables (AKA chick peas)
Sweet potato chickpea bake (aka chick pea). It’s a simple, vegan baked chickpeas and vegetables tray bake, done in a range of easy and quick ways. You’ll get a delish, spiced veggie and chickpea tray bake combination.
Start by making the very easy tahini sauce. Follow the steps immediately below.
Ingredients for baked chickpea tahini sauce
- 3 dessert spoons of tahini
- Salt to taste
- Some water for consistency of mix
- Lime or lemon… about half of one, squeezed.
How to make tahini sauce for baked chick peas and vegetables
- Put the above ingredients into a blender or bowl
- Mix together to get a consistency you can drizzle over the vegetables and chickpeas, like on the plate below.

Here are the ingredients for this sweet potato chickpea bake.
- Vegetables such as sweet potato, pumpkin, carrots, potato, zucchini, red capsicum, or whatever you prefer or have handy.
- 2 red onions
- 2-3 tomatoes cut in half
- Whole cloves of garlic, unskinned
- Olive oil
- About a quarter of a teaspoon of cumin, and smoky paprika.
