Vegan Weber Recipes: Grilled Vegetables With Marinated Tofu And Tempeh.

A Vegan Barbecue Lunch With A Tahini Dressing, And What I Got Wrong The First Time.

Cut Everything Small, Keep The Lid Down, And Be Patient.

Introduction to vegan Weber recipes

This is one of my vegan Weber recipes: small cubes of pumpkin, halved baby eggplants and mushrooms cooked on a Weber, served with marinated tofu and tempeh, a mixed salad and a tahini dressing. It is a vegan lunch, mostly organic where I can, and the Weber gives it a smoky taste that the oven doesn’t.

I bought a Weber and tried it out over a long weekend. The first few attempts were disastrous. The vegetables I cut were too big. I was too impatient. I kept lifting the lid and letting the heat out. The veggies were either burnt or under cooked.

Then I managed to cook a super tasty mix of vegetables to go with a salad, plus tempeh and tofu. It is one of the best expansions of my cooking, with lots more variety for vegan foodies, if such a thing is conceivable.

Ingredients for vegan Weber recipes

Here are the ingredients for this Flametree Yoga Studio lunch. Chris’s notes on how many it serves, and on amounts for each ingredient, are coming.

The grilled vegetables

  • Pumpkin, cut in smallish cubes, with a small amount of olive oil
  • Mushrooms (large ones are best), with soy sauce and mirin
  • Baby eggplants, sliced down the middle, with a small amount of olive oil, soy sauce and mirin
  • Sweet potato (for the skewers version)

The protein

  • Marinated tempeh (I use the Tally Ho brand), sprinkled with a little soy sauce and mirin
  • Firm tofu, in the same marinade of soy sauce and mirin. I use a biodynamic firm tofu, which is firm enough for bamboo skewers.

The salad and sides

  • Baby spinach leaves
  • Baby beetroots
  • Grilled artichokes
  • Capsicums
  • Broccoli
  • Avocado, on the side
  • Baby tomatoes, on the side

The tahini dressing

  • Tahini
  • Quality salt
  • Lime
  • Olive oil

How to make vegan Weber recipes

Use these steps to cook the lunch on a Weber. Cut everything small, keep the lid down, and be patient. Chris’s notes on the Weber heat and the time for each vegetable are coming.

Step 1: Cut the vegetables small

  • Cut the pumpkin into smallish cubes and coat with a small amount of olive oil.
  • Big pieces were my first mistake, and they came out burnt outside and raw inside.

Step 2: Grill the pumpkin on the Weber

  • Cook the pumpkin cubes on the Weber.

Step 3: Steam, then grill the mushrooms

  • Place the mushrooms in a pan on the Weber with a small amount of water and steam them. For the large mushrooms, do them upside down.
  • Put soy sauce and mirin inside each mushroom.
  • When almost cooked, take them out and grill for a few minutes on the griller plate on the Weber.

Step 4: Cook the baby eggplants

  • Slice the baby eggplants down the middle.
  • Put them in a tinfoil dish lined with a small amount of olive oil.
  • Cook with a little soy sauce and mirin until soft, under the hood of the Weber. Once eggplant is properly cooked, it gets a golden, gooey and yummy quality.

Step 5: Marinate and grill the tempeh and tofu

  • Sprinkle the tempeh with a little soy sauce and mirin, then grill it on the stove.
  • Use the same marinade for the tofu.
  • For skewers, use a firm tofu on bamboo skewers, baked mostly in the Weber, with a touch of grilling at the end for extra taste.

Step 6: Make the salad and dressing

  • Mix baby spinach leaves, baby beetroots, grilled artichokes, capsicums and broccoli, with avocado and baby tomatoes on the side.
  • Mix the tahini dressing with quality salt, lime and olive oil, then drizzle it over the salad and the vegetables as you like.

Why do my Weber vegetables burn on the outside and stay raw inside?

In my first attempts that happened to me for three reasons: I cut the vegetables too big, I was too impatient, and I kept lifting the lid and letting the heat out. Cut small, keep the lid down, and give it time.

Can you cook mushrooms and eggplant on a Weber?

Yes. I steam the mushrooms in a pan on the Weber with a little water, soy sauce and mirin, then grill them for a few minutes at the end. The eggplant goes in a tinfoil dish with a little olive oil, soy sauce and mirin, under the hood, until soft.

Can you put tofu on skewers on a Weber?

Yes, if the tofu is firm enough. The one I use is a firm biodynamic tofu that holds on bamboo skewers. I bake it mostly in the Weber, with a touch of grilling at the end.

How much protein is in tempeh?

Tempeh has about 20.3 g of protein in every 100 g, according to the USDA FoodData Central database.

Vegan Weber recipes: quick questions answered

How do I make the tempeh and tofu taste good?

I sprinkle marinated tempeh with a little soy sauce and mirin, then grill it on the stove. I use the same soy and mirin marinade on the tofu.

What goes in the tahini dressing?

Tahini, quality salt, lime and olive oil. Drizzle it over the salad and the vegetables as you like.

What goes in the salad?

Baby spinach leaves, baby beetroots, grilled artichokes, capsicums and broccoli, with avocado and baby tomatoes on the side.

Why did my first Weber vegetables fail?

Mine failed because the vegetables were cut too big, I was too impatient, and I kept lifting the lid and letting the heat out.

Is this a vegan Weber recipe?

It is a vegan lunch. Check the label of any marinated tempeh, soy sauce and mirin you buy.
