A Vegan Layered Dessert With No Added Sugar, Sweetened With Strawberries, Blueberries And Vanilla.
Makes 6 Glasses. Simmers For About 15 Minutes, Then Chills For About 8 Hours.

Introduction to my tapioca pudding
This tapioca pudding is tapioca pearls simmered in coconut milk for about 15 minutes, flavoured with a vanilla pod, then layered in a glass with pureed strawberries, sliced strawberries, yoghurt and blueberries, and chilled for about 8 hours so it thickens. It makes 6 glasses. It’s vegan when you use coconut yoghurt or a low sugar soy yoghurt, and there’s no sugar in the recipe. The fruit and vanilla do the sweetening.
It’s super easy and yummy, and very refreshing. I eat it at any time, for lunch or dinner, and it’s especially good on a hot day. Most of the time is just waiting for it to chill, so it’s a good one to make the night before.
It’s a strawberry cousin of my sago dessert with coconut milk. This time the pearls cook in the coconut milk, and the fruit goes in as layers.

Ingredients for tapioca pudding
Here are the ingredients for this Flametree Yoga Studio dish. It makes 6 glasses.
The tapioca and coconut milk
- ½ cup of tapioca pearls
- 1 tin of organic coconut milk
- Salt
- 1 vanilla pod, with the inside scraped out
The layers
- 1 punnet of strawberries. Blend most of them, and keep some to slice for the layers and the top
- A handful of blueberries
- A dessert spoon of yoghurt. I use coconut yoghurt, or another low sugar soy yoghurt
I get my tapioca pearls at an Asian supermarket near me.

How to make tapioca pudding
Use these steps to make this strawberry tapioca pudding.
Step 1: Cook the tapioca pearls
- Put the tapioca pearls into a saucepan of hot water.
- Add salt, stir, and cook until the pearls are almost translucent.
Step 2: Simmer in coconut milk
- Turn the heat down, add the coconut milk to the pearls, and stir.
- Simmer for about 10 minutes. Stir often so it doesn’t stick.
- Take it off the heat and add the vanilla.

Simmer the pearls in the coconut milk for about 15 minutes.
Step 3: Get the strawberries ready
- Puree most of the strawberries.
- Slice the rest.
Step 4: Layer it in the glasses
- Put the strawberry puree in the glasses first.
- Then add some sliced strawberries, then the tapioca mix.
- Top with the yoghurt and the blueberries.
- You can change the layers around as you wish.

Top with yoghurt, strawberries and blueberries.
Step 5: Chill
- Put it in the fridge for around 8 hours.
- The mix thickens as it chills, and all the flavours merge together.

Is this tapioca pudding vegan and gluten free?
It’s vegan, as long as you use a plant yoghurt such as coconut or soy yoghurt. There’s no dairy and no egg.
Tapioca pearls, coconut milk, strawberries, blueberries and vanilla are naturally gluten free. Check the label on your yoghurt to be sure.
Is tapioca pudding the same as sago pudding?
Pretty much, the way most of us make it in Australia. Strictly speaking, true sago comes from the sago palm, and tapioca pearls are made from cassava. But the little pearls sold as sago are usually tapioca, and the two puddings are made the same way. My sago dessert uses the same pearls, with mango or blueberries.
How much vitamin C is in strawberries?
Raw strawberries have about 58.8 mg of vitamin C in every 100 g, according to the USDA FoodData Central database. That’s part of what makes them such a good way to sweeten a dessert without sugar.

Chill for about 8 hours, then serve.

Is there any sugar in it?
No sugar goes into the recipe. The strawberries, blueberries and vanilla sweeten it. Choose a low sugar yoghurt for the top.
How do I stop the tapioca sticking to the pan?
Stir it often while it simmers in the coconut milk.
Can I change the order of the layers?
Yes. Layer it however you like.
