Introduction to my avocado banana smoothie

This avocado banana smoothie blends two small avocados with half an apple, fresh ginger, a frozen banana, coconut yoghurt and plant-based milk. There’s no added sugar. It takes about 5 minutes, it’s fully vegan, and the avocado makes it thick and creamy rather than watery. Pour it into a glass, or spoon it into a bowl and load the top with fruit and seeds.

Why do I make it so often? The healthy fat in the avocado keeps me full until lunch. That’s the thing most breakfast smoothies get wrong.

The frozen banana is the trick. It does the job ice does in other smoothies, but it makes the smoothie thicker and sweeter instead of watering it down.

Ingredients for the avocado banana smoothie

Here are the ingredients for this Flametree Yoga Studio breakfast. Blend them all together.

  • 2 small avocados
  • ½ an apple
  • A few slices of fresh ginger
  • 1 small frozen banana
  • 2 tablespoons of coconut yoghurt
  • ÂĽ cup of plant-based milk
  • Vanilla scraped from a vanilla pod (optional)

For the smoothie bowl version

  • Chia seeds
  • Sunflower seeds and pumpkin seeds
  • Coconut flakes
  • Fresh fruit: raspberries, strawberries, blackberries and kiwi fruit work beautifully

Avocados grow in the Top End, and at the right time of year you’ll find local ones at the Coolalinga and Darwin markets. Use whatever fruit is in season here for the top.

Chia seeds in a line down the middle, then the berries. It takes two minutes and it makes breakfast feel like a treat.

How to make the avocado banana smoothie

Use these steps.

  • Scoop the flesh out of the avocados into the blender.
  • Add the apple, the ginger, the frozen banana, the coconut yoghurt and the plant-based milk.
  • Add the vanilla if you’re using it.
  • Blend until smooth and creamy. Add a little more milk if it’s too thick to pour.
  • For a bowl, keep it thick. Spoon it into a bowl and add the chia, seeds, coconut flakes and fruit on top.

Is an avocado smoothie actually healthy?

It’s filling, and the sweetness comes from fruit rather than sugar or honey. Avocado brings fibre and healthy fat: about 6.7 g of fibre and 14.7 g of fat in every 100 g, according to the USDA FoodData Central database. Fat slows digestion, which is why this one holds you until lunch.

It is a rich smoothie, so one glass is usually enough.

Why put ginger in a smoothie?

A few slices of fresh ginger lift the whole thing. Avocado on its own is mild and a bit flat. The ginger gives it a warm edge, and the apple keeps it fresh. Start with two or three thin slices, taste it, then add more if you like.

What makes it creamy without dairy?

Three things: the avocado, the coconut yoghurt and the frozen banana. Together they give the thick texture that usually comes from milk or ice cream, so it’s a dairy free smoothie without being thin.

Sunflower and pumpkin seeds add a bit of crunch, and more protein.

How long does it take?

About 5 minutes, and most of that is peeling and chopping.

How many does it make?

Two glasses, or one generous smoothie bowl.

Can I make it ahead?

It’s best straight away. Avocado browns once it’s cut, so blend it when you want it.

What if I don’t have a frozen banana?

Use a fresh one and add a little ice. It won’t be quite as thick or as sweet. I keep peeled bananas in the freezer for exactly this.

Is it vegan and dairy free?

Yes. Coconut yoghurt and plant-based milk keep it free of dairy, and there’s no honey.

Can I use it as a smoothie bowl?

Yes. Use a little less milk so it stays thick, then add chia, seeds, coconut flakes and fruit.
