Jackfruit Tofu Curry With Mango, Coconut Milk And Lime.
A Creamy Vegan Curry With Baked Tofu, Fresh Jackfruit And A Little Sweetness From Ripe Mango.
Serve It With Red Rice. Finished With Lime And Fresh Coriander.
Introduction to jackfruit tofu curry
This jackfruit tofu curry is made with 6 cups of peeled, fresh jackfruit, a block of firm tofu (375 g) coated in rice flour and baked until golden, red capsicum, tomatoes, a tin of coconut milk and a ripe mango blended into a puree. It is spiced with cumin, garam masala, smoky paprika and medium curry powder, with fresh turmeric, ginger, garlic and a little chilli, and finished with lime juice and coriander. Serve it with red rice. It is a vegan curry. Fresh jackfruit is the star of this one. It cooks in the tomato, stock and coconut milk, and takes on the flavour of the spices. The mango goes in right at the end, so the sweetness sits next to the lime and the chilli. It is a good one to share around the table. If you have any comments or questions, please contact us. A closer look
Is this jackfruit tofu curry vegan?
Yes. It is made with jackfruit, tofu, coconut milk and vegetable stock, with no meat, dairy or egg. Check the labels on your vegetable stock and your curry powder, because brands vary. How much protein is in tofu?
Firm tofu has about 17.3 g of protein in every 100 g, according to the USDA FoodData Central database (firm tofu made with calcium sulfate). The 375 g block in this curry is baked separately, so it stays golden on the outside, then goes into the pot at the end.Why add mango to a curry?
The mango is blended into a puree and stirred in after the tofu, just before the lime juice and the coriander. That way the sweetness sits next to the sharp lime and the little bit of chilli, rather than cooking away.
