Tofu Rice Paper Rolls With Nori: Pan Fried Vegan Parcels From A Bali Cooking Class

Tofu Rice Paper Rolls With Nori, Pan Fried.

A Vegan Version Of A Bali Dish: Not Deep Fried, And Served With A Tamari Dipping Sauce.

Makes 8 To 10 Parcels.

Introduction to tofu rice paper rolls

These tofu rice paper rolls are a filling of crumbled firm tofu, grated potato, celery, leek, spring onions, garlic, shallot and macadamia nuts, cooked with tamari and mirin. Each spoonful goes onto a strip of nori, wrapped in two rice paper sheets, then pan fried in a little olive oil and sprinkled with sesame seeds. They are vegan, the recipe makes 8 to 10 parcels, and they are served with a dipping sauce of tamari, mirin and spring onions.

I adapted this from a cooking class at Pondok Pisang, where we stay on our Bali retreats. There, the dish is deep fried. Instead, I made it into rice paper parcels, cooked gently in a frypan.

Go easy on the chilli. I used only a small amount, because it was too hot. Be sure not to overwhelm the mixture with too much heat.

How to make tofu rice paper rolls

Use these steps to make these pan fried vegan parcels.

Step 1: Press the tofu

  • Flatten the firm tofu to remove the water: wrap it in a towel and place a heavy object on top.
  • Crumble the tofu into a bowl.

Step 2: Make the filling

  • Add the grated potato, and the finely cut celery and leek.
  • Blend the garlic, shallot and macadamia nuts, and add them.
  • Finely slice the spring onions and add them. Add the shiitake mushrooms, finely sliced, if you are using them.
  • Add chilli pepper or fresh sliced chilli. Be sure not to overwhelm the mixture with too much heat.
  • Add salt and pepper to taste, and mix it all together.

Step 3: Cook the filling

  • Sauté the mixture in a frypan.
  • When it is cooked, add the mirin and tamari.
  • Allow to cool.

Step 4: Wrap the parcels

  • Cut the nori sheet into strips, about the size of the palm of your hand.
  • Get a dish of warm to hot water. Quickly dip a rice paper sheet in it.
  • Lay out the sheet, place a nori strip on it, then add about a tablespoon of the mixture.
  • Fold the sheet neatly. Then prepare another rice paper sheet, put it on top, and fold it over.
  • Make 8 to 10 parcels.

Step 5: Pan fry

  • Preheat a large frypan and lightly coat it with olive oil.
  • Lay out the parcels carefully, and cook both sides on a lowish to medium flame.
  • Turn the parcels over with care.
  • Remove from the heat, and sprinkle with sesame seeds when cooked.

Step 6: Make the dipping sauce

  • Mix tamari, mirin and spring onions, and serve it with the parcels.

The filling, cooking in the frypan

Let it cool before you wrap it.

Are these tofu rice paper rolls deep fried?

No. The dish I learned at Pondok Pisang in Bali is deep fried. I wrap mine in rice paper and cook them in a frypan with a light coat of olive oil, on a lowish to medium flame.

How do you stop rice paper rolls tearing?

Dip each rice paper sheet only quickly in warm to hot water. Use two sheets for each parcel, one folded over the other. And turn the parcels over with care in the pan.

How much protein is in firm tofu?

Raw firm tofu has about 17.3 g of protein in every 100 g, according to the USDA FoodData Central database. This recipe uses a 375 g block.
