Marinated Mushrooms, Poached In Tamari And Mirin.
A Simple Vegan Side Dish With Just Three Ingredients, And A Delightful Flavour.
Cooks In About 15 Minutes. Serve Cool And Thinly Sliced.
Introduction to marinated mushrooms
These marinated mushrooms are 4 large mushrooms, peeled and gently poached in a frypan of water with a little mirin and tamari. They cook for about 15 minutes, until they look flattened. Then I let them cool and serve them thinly sliced, with spring onions and a sprinkle of sesame seeds. They are vegan, and there are only three ingredients.
It is a very simple dish, but the flavour is delightful. The mushrooms soak up the tamari and mirin as they poach, so they come out dark, soft and full of flavour.
I like them as a side dish, cool and sliced, next to other vegetables or with a little dipping sauce.

Are marinated mushrooms vegan?
Yes. These marinated mushrooms are just mushrooms, water, tamari and mirin, with spring onions and sesame seeds to garnish. There is no dairy, egg or honey. If you need them gluten free, check the labels on your tamari and mirin, because brands vary.
How many calories are in mushrooms?
Raw portabella mushrooms, a large flat mushroom, have about 22 calories and 2.1 g of protein in every 100 g, according to the USDA FoodData Central database. So a plate of them is light, but full of flavour.
How are these different from marinated mushrooms in a jar?
Marinated mushrooms from the shop usually sit in oil and vinegar. Mine are poached in water with tamari and mirin, so they are softer, and there is no oil at all.
