Rice Noodle Soup With Tofu Rice Paper Rolls, Shiitake Mushrooms And Nori Sheets.
A Vegan Noodle Soup With A Tamari And Mirin Broth, Crunchy Vegetables And Pan Fried Rolls On Top.
Two Rice Paper Rolls In Each Bowl. Eat It While It Is Steaming Hot.
Introduction to rice noodle soup
This rice noodle soup is flat rice noodles and lightly sautéed carrot, celery and broccoli, with shiitake mushrooms and spring onions, in a broth of water, vegetable stock, tamari and mirin. Two small tofu rice paper rolls go on top of each bowl, and it is garnished with finely sliced nori and sesame seeds. It is vegan, and best eaten while it is steaming hot.
The rice paper rolls are the same tofu, potato and vegetable parcels I make from a Bali cooking class. You can find that recipe here: my tofu rice paper rolls with nori. Make them first, then build the soup around them.
For the stock, make your own, or use one good brand of vegetable stock cube.

Is this rice noodle soup vegan?
Yes. The broth is vegetable stock with tamari and mirin, and the rice paper rolls are filled with tofu and vegetables. If you use a stock cube, check the label. If you need it gluten free, check your tamari, mirin and stock labels too, because brands vary.
How is this different from pho?
Pho is a Vietnamese rice noodle soup, usually made with a beef or chicken broth. Mine uses a light vegetable broth with tamari and mirin, and has tofu rice paper rolls on top instead of meat.
How much protein is in firm tofu?
Raw firm tofu has about 17.3 g of protein in every 100 g, according to the USDA FoodData Central database. The tofu in the rice paper rolls is what makes this soup a filling meal.
