Gluten Free Wontons With Tofu & Shiitake: Steamed, Vegan & Homemade Wrappers

Gluten Free Wontons With Tofu And Shiitake, Steamed And Vegan.

Takeaway Style Wontons, Without The Wheat Or The Meat, In Wrappers You Make Yourself.

Makes 12, Enough For 3 People. Ready In About 45 Minutes. Fully Gluten Free With A Tamari Dipping Sauce.

Introduction to gluten free wontons

These gluten free wontons are filled with crumbled firm tofu, grated carrot and potato, celery, leek, shiitake mushrooms, spring onions, garlic, ginger and a sprinkle of Japanese chilli pepper, lightly cooked with tamari and mirin. The wrappers are made from a gluten free flour mix of rice flour, tapioca starch and cornflour. They are steamed for 15 to 20 minutes, until they look translucent. 250 g of the flour mix makes 12 wontons, enough for 3 people, and the whole thing takes about 45 minutes. They are vegan and, with tamari in the dipping sauce, gluten free. Serve them steaming hot with spring onions.

You can use shop-bought wonton wrappers, and that is quicker. But this time I made my own, from a gluten free flour mix. The recipe is a mix of what I learned on a Flametree Bali retreat and my own ideas. It is very satisfying when you lift the lid of the steamer and see them turn translucent.

Ingredients for gluten free wontons

Here are the ingredients for this Flametree Yoga Studio dish. It makes 12 wontons, enough for 3 people.

The filling

  • 1 block of firm tofu (375 g), pressed to remove the excess water
  • 1 medium carrot, grated
  • 1 medium potato, grated
  • Half a stick of celery, finely sliced
  • 1 piece of leek leaf, about the width of your hand (thumb to little finger), finely sliced
  • 5 dried shiitake mushrooms, soaked, then finely sliced
  • 3 spring onions, finely sliced
  • 3 cloves of garlic, finely chopped
  • Half a finger length of ginger, finely sliced
  • A good sprinkle of ichimi togarashi (Japanese ground red pepper)
  • 1.5 tablespoons of tamari
  • 1.5 tablespoons of mirin
  • A little olive oil, to coat the pan

The gluten free flour mix

Mix these together. It makes 1 kg, so you will have plenty left for next time. You can buy all three at Coles, Woolworths or the larger IGAs in Darwin. That is 5 parts rice flour, 3 parts tapioca starch and 2 parts cornflour.

  • 500 g of finely ground white rice flour
  • 300 g of tapioca starch
  • 200 g of cornflour (maize flour also works)

The wrappers

  • 250 g of the gluten free flour mix
  • 1/2 teaspoon of salt
  • Hot water: start with about 1 cup
  • 1 dessert spoon of olive oil

Or use shop-bought wonton wrappers. Most are made with wheat, and some contain egg, so check the label if you need them gluten free or vegan.

The dipping sauce

  • 2 tablespoons of tamari (this keeps the whole dish gluten free)
  • 2 tablespoons of mirin
  • A dash of sesame oil

To serve

  • Chopped spring onions

The tofu and vegetable filling

Lightly cooked, then left to cool.

Spring onions to serve

The Japanese chilli pepper I use

A small bottle of ichimi togarashi, Japanese ground red pepper, used in the wonton filling

Ichimi togarashi: a good sprinkle is plenty.

How to make gluten free wontons

Use these steps to make these steamed vegan wontons.

Step 1: Make the filling

  • Press the tofu to remove the excess water, then crumble it.
  • Mix the tofu with all the vegetables, the garlic, ginger and Japanese chilli pepper.
  • Add 1.5 tablespoons of tamari and 1.5 tablespoons of mirin.
  • Coat a large frypan with a little olive oil, and lightly cook the mixture for 8 to 10 minutes.
  • Let it cool down before you put it in the wrappers. This is my biggest tip.

Step 2: Make the dough

  • Mix 250 g of the gluten free flour mix and 1/2 teaspoon of salt with hot water. Start with about 1 cup, then add more as needed, until the dough is pliable and easy to work with, but not runny.
  • Add 1 dessert spoon of olive oil.
  • Knead it like bread.

Step 3: Roll out the wrappers

  • Break off small pieces of dough and roll each one out with a rolling pin.
  • Be careful not to roll them too thin, but keep a good, even thickness.
  • Cover the wrappers while you roll out each one, so they don’t dry out.

Step 4: Fill and close

  • Put about 1 teaspoon of the filling on each wrapper. Don’t overfill.
  • Pinch the tops to close.
  • Put a little water on the ends to seal them.

Step 5: Steam

  • Place the wontons into a steamer.
  • Steam until they look translucent. With rice flour wrappers, this takes around 15 to 20 minutes.

Step 6: Serve

  • Mix 2 tablespoons of tamari, 2 tablespoons of mirin and a dash of sesame oil for the dipping sauce.
  • Serve the wontons steaming hot.
  • Add chopped spring onions, and cover with the dipping sauce.

Are these wontons gluten free?

Yes, with tamari. The wrappers are made from rice flour, tapioca starch and cornflour, with no wheat, and both the filling and the dipping sauce use tamari rather than soy sauce, which usually contains wheat. Check the labels on your tamari and mirin, because brands vary.

How much protein is in tofu?

Firm tofu has about 17.3 g of protein in every 100 g, according to the USDA FoodData Central database (firm tofu made with calcium sulfate). The 375 g block in this recipe is the heart of the filling.

How are these different from takeaway wontons?

Takeaway wontons are usually filled with pork or prawn, and wrapped in wheat and egg wrappers. These are filled with tofu and vegetables, wrapped in a gluten free dough, and steamed rather than fried.
